Mayonnaise is an oil-in-water emulsion, and producing it consistently depends on how well the line forms, stabilises and packs that emulsion. A well-designed mayonnaise line controls the order of ingredient addition, the oil feed rate, the shear applied during emulsification and the temperature at every step. This guide explains the process, the main machines and the quality checks that matter most.
Al Hariri Group is among the leading manufacturers of food processing lines in Turkey. We design and supply mayonnaise lines for customers in the Gulf, Europe and Turkey, from small batch systems to continuous high-output plants.
How mayonnaise is produced
Production usually starts by preparing the water phase, which combines water, vinegar or other acids, egg yolk or an egg-free emulsifier, salt, sugar and seasonings. Oil is then added gradually under high shear, so that it breaks into fine droplets and forms a stable emulsion.
The emulsion is homogenised, de-aerated to remove trapped air, cooled and then filled. For egg-based products, a pasteurisation step is normally included to meet food safety requirements.
Key machines in a mayonnaise line
A typical line includes batching and storage tanks, dosing pumps for oil and liquids, a high-shear mixer or vacuum emulsifier, a colloid mill or homogeniser, a de-aerator, heat exchangers for cooling, and filling machines suited to viscous products. Capping, labelling and a CIP (clean-in-place) system complete the line.
Vacuum emulsifiers are popular for premium products because they reduce air incorporation and give a smoother, more consistent texture.
Controlling texture and stability
Texture depends on oil ratio, droplet size, temperature and mixing time. Small changes in any of these can affect viscosity and shelf stability. Inline viscosity sensors, temperature probes and PLC-based recipe management help keep each batch within specification.
Stored recipes also make it easier to switch between products, such as regular, light or vegan mayonnaise, without losing consistency.
Hygiene and food safety
Product-contact surfaces should be sanitary stainless steel with smooth welds and no dead spots. A CIP system is recommended to clean pipes and vessels between batches. For egg-based recipes, controlling temperatures and holding times is essential for safety.
Batch records and traceability, linking each production run to its ingredient lots, support compliance with the standards of your target markets.
Batch or continuous: choosing the right layout
Batch systems suit plants that produce several recipes or run smaller volumes, since they are flexible and easier to adjust. Continuous lines suit high-volume production of a single or limited number of recipes, offering higher output and more consistent quality.
The right choice depends on your product range, expected volume, and how often you plan to change recipes.
Frequently asked questions
Is a batch or continuous mayonnaise line better?
A batch line suits varied recipes and smaller volumes, while a continuous line suits high output of one or a few recipes. The best option depends on your product range and production volume.
Can a mayonnaise line produce egg-free or vegan mayonnaise?
Yes. With the correct emulsifier and stabiliser dosing, and adjusted process settings, the same type of line can produce egg-free or vegan variants. Recipe programming helps switch between them.
Does Al Hariri Group supply complete mayonnaise lines?
Yes. We provide design, supply, installation, operator training and after-sales support. Each line is sized to your capacity and recipe requirements.
