Date syrup, also known as date molasses, is a naturally sweet product made by extracting and concentrating juice from dates. Setting up a plant for it means choosing the right equipment for washing, pressing, filtering, concentrating and filling, while keeping hygiene and product consistency under control. This guide walks through each stage of a typical line and what to consider when planning one.
Al Hariri Group is among the leading manufacturers of food processing lines in Turkey, and we supply complete plants to customers in the Gulf, Europe and Turkey.
How date syrup is made
Production starts with sorting and washing dates to remove dirt and damaged fruit. The dates are then soaked or cooked, and the pulp is pressed to separate the juice. The juice is filtered to remove fibres and solids, then concentrated by evaporation until it reaches the target sugar level (Brix).
In the final stage the syrup is cooled, packed and stored under conditions that protect its quality and flavour.
Core equipment in a date syrup line
A typical line includes a date washer, cooking and extraction tanks, pulp presses, filtration units, an evaporator or concentrator to raise the solids content, heat exchangers for cooling, and filling and capping machines. A CIP (clean-in-place) system keeps internal surfaces clean without dismantling.
Parts that contact the product are usually made from stainless steel, which is easy to clean and resists corrosion.
Quality and hygiene control
Syrup quality depends on stable sugar content (Brix) and temperatures during concentration, along with clean equipment and sound raw material. Continuous temperature and Brix measurement is recommended, together with a traceability system that links each batch to its source and production stage.
A documented cleaning and sanitation schedule for each line helps meet the food standards of your target markets.
Plant planning: capacity and layout
Planning starts with the required capacity in tonnes of dates per day, since this determines the size of each machine. Utility needs for water, steam and power, space for raw dates and finished product, and staffing and training must also be considered.
It is worth leaving room for future expansion, such as a second filling line or derived products like date paste.
Packaging and storage
Syrup is filled into glass or plastic bottles, jars or pouches, depending on the target market and volume. Filling temperature and closure method matter to prevent contamination and fermentation.
Store packed goods in a cool, dry place away from direct light, with clear labels showing production and expiry dates.
Frequently asked questions
What is the difference between date syrup and date paste?
Date syrup is a concentrated liquid juice, while date paste is a thicker, mashed pulp. The lines differ mainly in the pressing and concentration stages.
Can a date syrup line be automated?
Yes. The line can be automated from washing to filling with programmable logic controllers (PLC), with temperature and Brix monitored automatically.
Does Al Hariri Group supply complete lines?
Yes. We provide design, supply, installation, operator support and training, with each line sized to your required capacity and product specification.
